Local Hachiya persimmons sourced from Spurrell Foraging's Silvan farm in the middle of Autumn. Picked, peeled, and strung up to air dry in the winter breeze, including a daily massage by hand to help even drying. They are then aged for a further 2 months to develop a stunning sugar bloom. 

These hoshigaki have been dried to a lower hydration level than the traditional jelly consistency. The concentrated, medium-firm fruit has brought on amazing complexity and show-stopping sugar bloom development.

NOTES: Black tea, butternut pumpkin, banksia honey, wheat grass, wattle blossom, brandy.

Enjoy this hoshigaki cut into thin slices accompanied with a tannin heavy tea, peated old fashioned or an oily, white. 

Each hoshigaki is its own, unique fruit so size and sugar bloom will vary slightly. They will weigh around 39-46g. This will be 20-50 slices worth depending on the thickness cut. I highly recommend channelling your inner Nonna, Baba or Yaya at the deli and slice as thin as humanly possible.
